Ingredients

    • ½ cup dark rum
    • 2 tablespoons lime juice or 2 tablespoons lemon juice
    • 2 tablespoons soy sauce
    • 2 tablespoons brown sugar
    • 4 garlic cloves, minced
    • 2 jalapeno peppers, seeded and minced
    • 1 tablespoon fresh ginger, minced
    • 1 teaspoon dried thyme leaves
    • 1 teaspoon black pepper
    • 6 boneless skinless chicken breast halves

Directions

  1. Combine all ingredients in small bowl. Place chicken in food storage bag. Pour marinade over chicken. Refrigerate 4 hours or overnight, turning bag once or twice.
  2. Spray grill with cooking spray. Grill chicken until no longer pink.
